紫蓮の翼

水 煮 魚



材料：鱸魚 芹菜 （豆芽）

調料：蔥 姜 蒜 紅干辣椒 花椒 豆瓣醬 料酒 醬油 雞精 胡椒粉 精鹽 糖 味精 澱粉 菜油


第一步：處理魚

把魚洗乾淨，切片，然後放入容器裡加入適量的料酒，精鹽，糖，雞精，胡椒粉 蛋清，和澱粉浸泡半小時左右。


第二步：做湯料

先做胡辣油和刀口辣椒，把干辣椒和花椒在熱水裡泡一會之後控干，放入小火油鍋內炸香，再撈出，然後把它們切碎成刀口辣椒。用炸辣椒和花椒的油再煸炒豆瓣醬，炒香後放入蔥姜蒜沫，翻炒後再依次放入胡椒粉，精鹽，醬油最後倒入骨頭湯（水也可以），燒開後，把處理過的魚在清水裡沖洗一遍，放入湯鍋裡煮開，大約煮五分鐘左右，不能太久。


第三步：處理蔬菜

把芹菜或是豆芽洗淨切好，燒開水，水裡放入雞精，鹽和少量的油，把芹菜或豆芽入進煮一小會，撈出來墊在盆底


最後:

把煮好的魚片湯汁一起倒在盆裡，
